APOFRUIT ITALIA brings together over 2,750 producers under a single denomination, the Patata di Bologna DOP, whose protected area spans fifty-five municipalities. The cooperative handles 151,000 tons of fresh fruit and vegetables annually, maintains direct relationships with the market, and supports its members with specialized agronomic assistance, balancing large-scale operations with individual field control. The cornerstone of their work is the Primura variety: oval-elongated tubers with smooth skin and firm, yellowish-white flesh, selected in sizes from 40 to 75 millimeters to ensure consistent uniformity. It is in this regularity — of shape, size, and consistency — that the quality of a protected origin destined for travel is measured. Investments in enhancing production serve precisely this purpose: to bring the Bolognese potato to markets with its guaranteed integrity, ensuring that the distance between field and table does not alter its recognizable characteristics.
