Arena Giovanni works on the slopes of Etna, where the mineral soils of the Catania side and the volcanic origin of the land provide an unparalleled context for olive trees. The Monte Etna DOP denomination embraces 48 municipalities distributed around the volcano, an area that coincides with a UNESCO World Heritage landscape, but here the administrative perimeter matters less than the exact spot where the plant grows. The company focuses precisely on this: capturing the character that altitude and geology impart to each harvest. The resulting extra virgin olive oil presents a yellowish-green hue and a profile marked by green fruit and herbaceous notes, traits that vary in nuance according to altitude and vintage. It is not a uniform oil, but a product that bears the variability of the volcano, its rock, and its thermal excursions. Arena's work consists of not standardizing this signature, allowing each campaign to tell the specific conditions in which the olives matured, from the lower slopes to the higher reaches of the mountainside.
