Davide Vignato works the volcanic terroir of Gambellara, where the black basalt soils originating from Monte San Marco—an extinct volcano just five hundred meters from the cellar—demand precision and respect. It's a singular geology for Veneto, which translates directly into the glass. His Recioto di Gambellara DOCG is made from Garganega grapes and comes in two styles, passito (dried grape wine) and spumante (sparkling), both over fourteen degrees: dense and mineral expressions where sweetness never covers the rocky foundation. The drying process concentrates the fruit, while the effervescence lightens its texture, two interpretations of the same variety on a single soil. The winery welcomes visitors for tastings, and the proximity of the volcanic cone makes the stop particularly eloquent: those who visit can taste the passito and spumante just steps away from the basalt that generated them, personally verifying how Gambellara's volcanic soil speaks through the wine.
