Cultivation revolves entirely around the Primura variety, selected for the traits required by the regulations: a regular, elongated-oval shape, smooth and compact skin, and white flesh with a faint yellow tinge. At Corte del Duca di Orsini Veronica, every tuber is measured against the DOP standard, where caliber and consistency are as important as appearance.
