Azienda Agricola Goio Oscar

Among the rice paddies of northeastern Vercellese, in Rovasenda, Azienda Agricola Goio Oscar works with a single denomination: Riso di Baraggia Biellese e Vercellese DOP. This protection encompasses twenty-eight municipalities in northern Piedmont, where volcanic soils and cool alpine currents create a unique rice-growing environment, different from the large water plains further south. It is within this restricted perimeter that the company concentrates its field work. The resulting rice is recognizable at the table: very firm cooking resistance and particularly low stickiness, two properties that distinguish Baraggia in Italian and European kitchens, and which depend as much on the variety as on the rigid climate of the plateau. The management of the water chamber and the choice of harvest time are here decisions that weigh heavily on the final result, rather than routine gestures. Goio Oscar interprets this territory as a resource to be read with precision, grain by grain, not seeking volume but the consistency that the denomination demands.
