AZIENDA ZOOTECNICA SANT'ANTONIO SAS

Based in Bitritto, in the province of Bari, Azienda Zootecnica Sant'Antonio operates straddling Puglia and Basilicata, managing livestock farming with advanced technologies and attention to animal welfare. From this livestock base, an apparently lateral path emerges, leading the company to a single protected denomination: Pane di Altamura DOP. This durum wheat bread is recognized in only five municipalities, and its production follows methods fixed by time: natural leavening, local water, and sea salt, without exceptions. Each loaf is part of the Suina Gran Lucano supply chain, which connects field work and animal husbandry to the final transformation of the wheat. Public access is not provided, but the loaf fully tells its origin: the thick crust, the crumb with the warm color of durum wheat, and its long shelf life are the hallmarks of a bread whose production specifications keep it anchored to five municipalities, where semolina and sourdough starter remain the only true protagonists.
