Mauro Bignami cultivates Patata di Bologna DOP in the plain of Calderara di Reno, within a protected origin that extends over fifty-five municipalities in Emilia-Romagna. It is the only denomination the farm dedicates itself to, and the choice falls entirely on the Primura variety, recognizable by its firm white flesh and elongated oval tubers.
