On the northern slope of Etna, in Randazzo, Bonaccorso Alice Maria produces extra virgin olive oil within the Monte Etna DOP denomination, which protects an olive-growing area distributed across forty-eight municipalities around the volcano. Here, cultivation takes place at high altitudes, on lava soils that impart a recognizable mineral tension to the fruit, evident in its color, oscillating between yellow and green. Each pressing translates this high-altitude location into a profile where notes of green fruit and ripe fruit coexist, softened by an herbaceous background. The yield does not aim for easy softness but for fidelity to the territory: year after year, the oil reflects the particular conditions of extreme olive growing, exposed to thermal excursions and the minerality of the Etna soil. This production is measured by the verticality of the landscape rather than by quantity, and it makes altitude and volcanic rock its constant references, yielding an extra virgin olive oil that carries the signature of a high-mountain environment, where the volcano dictates the rhythm of the harvest.
