Gattinara DOCGGhemme DOCG

From Barengo, in the Novara area, Gilberto Boniperti works with two of the denominations that have built the reputation of Alto Piemonte: `Gattinara` and `Ghemme`, both `DOCG` and centered around `Nebbiolo`—here called `Spanna`—blended with `Vespolina` and `Uva Rara`. These are mountain wines, born from acidic soils and a climate that prolongs ripening and sharpens acidity. The difference between the two is measured in their production specifications. `Gattinara` requires thirty-five months of aging and does not fall below 12.5% alcohol; `Ghemme`, which extends over two municipalities, demands at least thirty-four months and starts at 12.0%. These are small thresholds on paper, but sufficient to mark two distinct expressions of the same grape variety: the first more severe and vertical, the second just slightly broader. In the atlas of protected origins, Boniperti represents the small but demanding scale of northern `Nebbiolo`, where structure is sought not in power but in tension and the length of cellar times.
