Fausto Boscolo Nale cultivates Radicchio di Chioggia IGP between the lagoon shores and the plains of the Venetian delta, where the salinity of the soils and the rhythms of the tides become part of the vegetable's character. The denomination brings together ten municipalities, a handkerchief of land suspended between fresh and salt water. The heads grow spherical and compact, with dark red skin crossed by very fine white veins: a contrast that is the variety's signature. Two cycles mark the year, the early and the late, and together they cover much of the season while maintaining consistent quality. The radicchio that emerges is both a culinary product and a document of the Po delta landscape, where the tide and salt are as important as the hand of the sower.
