In Chioggia, at the tip of the Po delta, Michele Boscolo Nale cultivates Radicchio di Chioggia IGP, a vegetable that owes its identity to the encounter between brackish water and lagoon soils. The producer works with both early and late varieties of this spherical, compact radicchio, prized for its dark red leaves traversed by delicate white veins. The landscape, made of lagoons and waterways, is not a mere backdrop but an ingredient: it is the particular conditions of soil and humidity that shape the crisp texture and bitter note that make this vegetable one of the most distinctive in Venetian horticulture. Boscolo Nale upholds cultivation practices rooted in the protected area, which includes ten municipalities, preserving the characteristics recognized by the denomination. The result is a radicchio that bears the mark of the delta in its color and bite, where land and water contend for every field and define what, in the end, arrives on the table.
