Between the Asiago plateau and the Venetian plain, Brazzale S.p.a. embodies a rare continuity: eight uninterrupted generations since the late 18th century. It was in Zanè, near Thiene, that the company established Italy's first industrial butter factory in the early 20th century, bridging the dairy knowledge of the mountains and the lowlands. Their work revolves around two protected designation cow's milk cheeses, each linked to a vast area. Asiago DOP is produced in 292 municipalities across Veneto and Trentino, offering both fresh and more aged versions; Provolone Valpadana DOP, on the other hand, encompasses 726 municipalities in the Po Valley, a pasta filata cheese known for its long maturation. This combination of mountain and plain expertise has made Brazzale the oldest Italian dairy company still in continuous operation, and among the pioneers in the recognition of protected denominations.
