Bussolan Silla

On the edge between land and Lagoon, where the Po delta deposits saline soils and the maritime air softens the seasons, Bussolan Silla cultivates Radicchio di Chioggia IGP. It is in this border environment that the vegetable takes on its compact spherical shape and crimson streaks laced with white, making it a variety recognizable at a glance. The work takes place within the ten municipalities of the protected area and follows the complete cultivation calendar: harvesting includes both early and late types, so that the radicchio is available throughout the entire year without interruption. From this continuity comes a product that fully expresses the character of the variety, from the fresher crispness of the first yields to the more decisive notes of mature cycles. A vegetable that, in its very geography, embodies the relationship between saline soil, climate, and the hand of the cultivator.
