In Budrio, on the outskirts of Bologna, Giuseppe Calandriello cultivates Patata di Bologna DOP, the sole denomination of his farm, protected across fifty-five municipalities in Emilia-Romagna. The Primura variety yields the ovoid and elongated tubers that define the Bolognese standard—forty to seventy-five millimeters, smooth skin, flesh oscillating between white and pale yellow—a recognizable physiognomy even before the taste. Cultivating within a precisely regulated area means accepting its constraints as a measure of work. Calandriello oversees the parameters that accompany these tubers from the plains' fields to home kitchens and European market stalls, where the name of Bologna serves as a guarantee of caliber and uniformity. There is no spectacle in this cultivation, but an agricultural discipline evident in the regularity of each harvest, season after season, which brings together varietal selection, plain terrain, and the shared rules of an entire horticultural district.
