Salvatore Camarda produces in Randazzo, where the volcanic slopes of Etna offer olives the conditions that lead to DOP certification. His Monte Etna extra virgin olive oil is the sole denomination of the house, and in it, he concentrates its entire identity: an oil with a bright yellow-green color, herbaceous notes, and that subtle fruitiness distinguishing productions from the Etna area, which spans forty-eight municipalities. Its character stems from the specificity of the place rather than the breadth of a catalog. Cultivation takes place at high altitudes, on basalt-rich soils, and it is precisely the altitude and volcanic matrix that impart the oil its measured finesse, without excess. Instead of pursuing a range, Camarda entrusts his signature to this single expression, crafted in adherence to the strict conditions imposed by the Etna environment. The result reads like a precise fragment of the volcano's slope: bright in color, herbaceous on the nose, subtle in fruit, and unmistakably volcanic in origin, capable of conveying in every drop the altitude and basalt from which it comes.
