In Affi, a town in the Bardolino area of Verona, Cantina Caorsa concentrates its work on a single denomination, the Bardolino Superiore DOCG. This is the most demanding version of the lake-side red: a minimum of twelve months of aging and a blend built around Corvina veronese, with Corvinone and Rondinella completing its profile. The choice of Superiore, rather than more immediate styles, guides the winery towards wines of structure rather than mere drinkability. The character originates from the volcanic soils of the sixteen municipalities in the area, where soil and climate converge to give a traditionally light wine an unexpected persistence. Each label is measured by two simultaneous fidelities: the production regulations and the character of the surrounding Veneto landscape. There is no pursuit of power for its own sake, but rather a balance between elegance and backbone, which the required aging period makes possible.
