Cantina Rinaldi

In Poncarale, at the northern tip of the Capriano del Colle area, Cantina Rinaldi occupies a rare micro-parcel on the northern slope of Montenetto, where the exposure ensures full light and consistent ripening. Paolo's family estate manages just ten thousand square meters—a chosen, not imposed, dimension—dedicated to a single denomination, the Capriano del Colle DOC. The method is one of subtraction: during veraison, the vineyards are systematically thinned, removing half of the bunches to concentrate character and far exceed the minimum requirements of the regulations. Yields hover around seventy quintals of grapes per year, well below the permitted limits, because here, each vine represents a commitment to quality rather than volume. The winery is open for visits: a stop in Poncarale means seeing firsthand what this choice of scale entails and tasting a wine born from the deliberate decision to produce less.
