In the Castelli Romani, in Monte Porzio Catone, the local Cantina Sociale works the volcanic and calcareous soils of the Mediterranean altitude to produce two DOCG white wines with opposite registers but the same root. Cannellino di Frascati, produced in five municipalities, is the sweet, late-harvest version: minerality and a fresh appeal for after-dinner. Frascati Superiore is its dry and structured counterpart, built on Malvasia bianca di Candia and the indigenous Bellone. Both denominations utilize the pale-skinned grape varieties favored by the Lazio terroir, and the cooperative matrix does the rest: widespread contributions, a collective interpretation of the territory, and DOP bottles that speak for an entire community of winemakers rather than a single name. The result is a two-voiced portrait of contemporary Frascati, where the same grape can be both a meditation sip and a table wine, depending on how the harvest and the winery decide to orient it.
