From Boca, on the edge of northern Piedmont's most challenging terroirs, Cantine Guidetti crafts two denominations that share a singular obsession: mountain Nebbiolo. The Gattinara DOCG, made from Nebbiolo accompanied by Vespolina and Uva Rara, does not leave the cellar for at least thirty-five months, an aging period that builds structure rather than softness. The Ghemme DOCG, harvested within just two municipalities, requires at least thirty-four months of aging. These are twin wines in discipline yet distinct in accent, both indebted to the altitude and granitic soils that here reduce yields and sharpen acidity. The Nebbiolo dell'Alto Piemonte does not seek the exuberance of its Langhe siblings: it presents itself as austere, taut, slow to unfold, and precisely this reticence is the signature of the area. In the comparison between the two labels, one can read an entire region, where granite and altitude impose long timelines and a personality that offers no shortcuts to taste or to the cellar calendar.
