Cantine Silvestri

In Lanuvio, within the volcanic area of the Castelli Romani, Cantine Silvestri has been working since 1929 on volcanic soils and at altitudes that mark the character of its wines. It is a family business that combines the viticultural heritage of Lazio with updated cellar techniques, surrounded by vineyards that slope down towards the countryside. The two protected denominations share the ampelographic base—`Malvasia bianca di Candia`, `Bellone`, and `Trebbiano`—but take different paths. `Frascati Superiore DOCG` is the dry and direct version; `Cannellino di Frascati DOCG`, on the other hand, comes from a late harvest and achieves a sweet complexity beyond 12.5% alcohol. The contrast between the two summarizes the dual soul of Frascati, between everyday drinking and meditation wine. The winery opens its doors to visitors for tastings, an opportunity to sample the two expressions side by side and grasp how the same grape variety changes when moving from ordinary to late harvesting.
