Cantine Volpetti

In Ariccia, within the five municipalities that define the Colli Romani wine area, Cantine Volpetti dedicates its work to two closely related white wines: Frascati Superiore and its late harvest variation, Cannellino di Frascati. Both protected denominations draw from the same heritage of grape varieties—Malvasia bianca di Candia, Bellone, and other indigenous grapes—vinified in both dry and sweet versions. On these volcanic soils, minerality and citrus notes are not a stylistic addition but a given of the soil, which the winery respects with measured fermentations and rigorous discipline during bottling. The result is benchmark interpretations, where technical precision serves to convey the character of the territory rather than to smooth it over. Volpetti thus works on the ridge between the immediate freshness of Frascati Superiore and the concentration of Cannellino, two faces of the same hill.
