Cantinoteca dei Prolo

On the hills of Novara, in Fara Novarese, Cantinoteca dei Prolo traces its origins to the first vines planted by great-grandfather Giuseppe in 1900. His grandsons Emilio and Carlo expanded its boundaries, naming each plot after local memory—Ochera, Valfantin, Scurgun. Four generations now converge in two DOCG reds, Gattinara and Ghemme, crafted from Nebbiolo, Vespolina, and Uva Rara: two expressions of the great Nebbiolo of Alto Piemonte, each with its own distinct character. The aging process adheres to the minimum times prescribed by the regulations—thirty-five months for the structure of Gattinara, thirty-four for the balance of Ghemme—without forcing the raw material. Sustainable practices and inherited craftsmanship meet in a cellar where knowledge is passed down through the family. Visitors to these hills can taste in the cellar, comparing the two denominations side-by-side and grasping, at a single table, the difference that just a few kilometers of land can impart to the same grape variety.
