Carbonaro Vincenzo

Carbonaro Vincenzo produces Monte Etna DOP extra virgin olive oil in Mascalucia, on the southern slope of the volcano. This Sicilian denomination encompasses forty-eight municipalities arranged around Etna, and from this foothill area, the company obtains an oil that bears the imprint of its birthplace: lava disintegrated over centuries and the altitude of the olive groves create conditions that few other Mediterranean areas can offer. In the glass, the oil presents a yellowish-green hue and a fruitiness that oscillates between the green note of freshly crushed olives and more mature accents, supported by an herbaceous background. The mineral-rich soils yield a profile as recognizable as it is tied to the place, where the volcanic character is not a label but a concrete component of the flavor. It is an extra virgin olive oil that encapsulates, in a few drops, the relationship between plant, altitude, and rock that defines agriculture on the Etnean slopes, making each vintage readable as a photograph of the slope from which it originates.
