In Andria, Salvatore, Antonio, and Vincenzo Nuzzi have been working for over thirty years on a single product: Burrata di Andria IGP, made from local milk with entirely manual craftsmanship. The dairy sources exclusively from nearby farms, entrusted to expert hands, and transforms that milk into a cheese with precise execution. Burrata is a thin shell of pasta filata that encloses hand-shredded ricotta and cream, and each batch requires attention at every step, with no shortcuts. Around them, the pastoral landscape between the Murgia plateau and the Apulian coast provides the context where cattle and sheep thrive and where this cheesemaking tradition has taken root. The brothers open their doors to those who wish to witness the production: it's worth stopping in Andria to see, thread by thread, the creation of the shell that holds the creamy heart, and to appreciate how much manual labor lies behind a seemingly simple cheese.
