Founded in 1899 by the intuition of the local parish priest, who saw milk processing as a lever to improve community conditions, Caseificio Sociale San Vito Povolaro brought together ninety founding members around a simple principle: to channel surplus milk from stables into a common product. From its first location on Via San Vito to its relocation in 1965 to Piazza Redentore, the cooperative has accompanied the growth of its territory without losing its original mutualistic function. Today, the milk supplied becomes Asiago DOP in its two temporal forms: the fresh wheel, soft and ready for immediate consumption, and the aged one, which concentrates flavor and structure over months of refinement. Between these two extremes, one can read the entire trajectory of the denomination, from the sweetness of freshly processed milk to the depth of mature cheese.
