Founded in the 1960s, Consoli Pasquale & F.lli operates from Adrano in Catania, where Mount Etna's volcanic slopes meet the Simeto Valley. The mill preserves its original character: lava stone grinding wheels and hydraulic presses extract oil from olives grown in this mineral-rich territory. Their Monte Etna DOP extra virgin captures the terroir's green fruitiness and herbaceous notes, produced across a 48-municipality zone where volcanic soils shape every pressed bottle. This continuity between traditional craft and protected designation defines their approach to oil-making.
