Damiano Cavallini

Damiano Cavallini works the volcanic soils of Fara Novarese in Novara, where two prestigious northern Italian appellations converge. His Gattinara DOCG and Ghemme DOCG wines rest for over three years, allowing Nebbiolo, Vespolina, and Uva Rara to develop complexity and structure. Both reds demand patience—minimum 12.5% alcohol in Gattinara, 12% in Ghemme—and reward it with layered character. Visitors are welcome to taste these austere expressions of Piedmont's lesser-known terroir directly at the cellar.
