Ducato d'Amalfi, based in Gragnano, stands as a specialist producer of Pasta di Gragnano IGP, the bronze-drawn durum wheat pasta protected by geographical indication. The pastificio sources exclusively Italian grain and water from springs in the Monti Lattari range, adhering to Gragnano's time-honoured milling techniques. Slow-drying and hand-packing preserve the pasta's protein-rich structure (minimum 13%) and straw-yellow surface, allowing it to absorb and retain every flavour of its sauce. The producer welcomes visitors for tastings.
