Eleonora Bertolone

Eleonora Bertolone farms in Collobiano, in the Vercelli hills of north-east Piedmont, where the Baraggia terroir yields her signature Riso di Baraggia Biellese e Vercellese DOP. This PDO rice cooks to an exact grain—neither mushy nor chalky—making it the preferred choice for risotto risottatori across Italy. Her farm preserves older varieties like Carnaroli Classico and Rosa Marchetti, now scarce as modern high-yield strains dominate. Each harvest honours both the land and the plate.
