Latteria Sociale Villa di Castelgomberto has been transforming Veneto's milk since 1901, when local dairy farmers established their cooperative in this Vicenza hilltown. Today, six member-producers deliver warm milk twice daily to the caseificio, which processes roughly 100 quintals into Asiago DOP daily. Their cattle graze on hay and fresh forage—no silage—enabling cheesemakers to age both Asiago Fresco and Asiago Stagionato without additives. Strict internal protocols govern animal welfare and milk quality, ensuring every batch meets exacting standards for this iconic protected cheese.
