Merlano Monica cultivates Riso di Baraggia Biellese e Vercellese DOP across the protected rice-growing zone of north-east Piedmont. This PDO variety, harvested from the Baraggia area's 28 municipalities, commands respect for its technical superiority: grains hold their structure through cooking while remaining low in glutinous starch, a rare combination that shapes how chefs and home cooks approach risotto and other preparations.
