Pastificio Il Mulino sources heritage wheat varieties—Khorasan, Saragolla, and Cappelli—from organic fields in Puglia's Alta Murgia, stone-milling each batch to preserve nutrients and grain aromas. In Gragnano, the historic heart of Italian pasta craft, the producers employ bronze dies and spring water from the Mills Valley, drying at controlled temperatures for 60 hours. The result: Pasta di Gragnano IGP with the denomination's signature straw-yellow colour, rough surface, and robust 13% protein minimum.
