Zambolin Fabio commands two of Piedmont's most austere DOCG territories from Cossato, in Biella's granite hills. The producer works Gattinara and Ghemme, neighbouring zones where Nebbiolo—locally called Spanna—pairs with the mineral grip of Vespolina and Uva Rara. Each wine endures three years in cellar: Gattinara's demanding 35-month minimum at 12.5% alcohol crafts wines of stern structure and longevity, while Ghemme's 34-month aging regime at 12% produces reds with taut tannin and herbal complexity. This is winemaking bound by regulation and terroir alike.
