The fresh breezes and calcareous soils of the relief give structure to the Asolo Prosecco DOCG, offered in still and sparkling versions, where the Glera and local grape varieties retain a mineral note that sets these wines apart from easy-drinking styles. The other denomination, Montello Rosso DOCG, moves in the opposite direction: a Bordeaux-style red—Cabernet Sauvignon, Merlot, and local red grapes—aged for at least eighteen months, built on tannin and depth rather than immediacy. Holding together the lightness of the sparkling wine and the backbone of the red is the defining characteristic of the winery.
