Furthermore, both the rosso and rosato versions must reach a high minimum alcohol level of 13.0% volume at consumption. Vintners limit maximum yields to 11.0 tonnes per hectare, producing wines historically aged for two months in chestnut wood before bottling, though this aging remains a non-mandatory artisanal practice.
