Vinified from at least 90% Nebbiolo—locally called Chiavennasca—the grapes are dried before fermentation, yielding a wine with a minimum of 14.0% alcohol. Ageing requires at least 20 months, including 12 months in wood, counted from April 1st of the year after harvest. To maintain its distinct identity, the regulations strictly forbid any 'riserva' or 'superiore' mentions on the label.
